Definitely a Kid Favorite. Making this is a breeze, with numerous alternative ingredients available based on what you have at home.
tl;dr;
This is a very quick and easy meal to make, even if you have to bake the chicken like the recipe says. Chicken took 14 minutes to cook in the Ninja. The rice took 11 in the Instant Pot. You can use your favorite crunchy base—Doritos, Takis, tortilla chips—whatever. Very easy to substitute.
Overall Impression
Summer vacation has just stared, and the kids have been hanging out by the pool all day. I was tasked at the last minute to make some dinner. I decided to switch from the standard Budget-Friendly plan and began exploring the Kid-Friendly plan for a chicken recipe. Any meal with Doritos has got to be good, right? Even Taco Bell offers Bridget's fav—Doritos Locos Tacos.
Everyone gave it either a 4 or 5-star rating. Yay. I found a dinner they will eat. Ours didn't look quite as professional, but I'm sure it tastes just the same as the eMeals' Test Kitchen.
Preparation
Looking over the ingredient list, I have just about everything. I chose a chicken recipe because I have frozen thin chicken breasts from Costco that can be fully cooked in the Ninja Indoor Grill within 12 minutes even when they are frozen. I didn't have a can of green enchilada sauce, but I did have a can of Red. We always have Three-Blend Mexican cheese from Costco, so we will use that instead of colby-jack.
After forking the chicken and heating it up with the enchilada sauce, everything was ready for the Taco Bowl Bar.
Next Time
I will leave everything as is, however I intend to purchase some green enchilada sauce. It will be interesting to see what a "fresher" tasting verde sauce will bring to the dish, especially the Doritos. I did see another recipe that just used regular tortilla chips.
What's nice about the Taco Bar is that everyone can fix their dinner as they like, ala Chipolte.
Sammy: "4 stars. I just liked it. I needed something crunchy because I don't like Doritos." What? Since when. Ok, next time I'll make sure to have some Takis available as well.
Epilogue
I heated up everything the next day for lunch, and it was just as good if not better.
